Serves 4
- 500g lean pork mince (5% fat or less)
- 2 spring onions, finely chopped
- 1 green chilli, deseeded and finely chopped
- 4 garlic cloves, crushed
- 5cm piece fresh root ginger, peeled and grated
- 3½ level tbsp mild curry powder*
- 1 tbsp chilli powder
- 3 tbsp chopped fresh coriander, plus leaves and sprigs to serve
- 3 tbsp fat-free natural Greek yogurt
- Low-calorie cooking spray
- 1 large onion, finely chopped
- 2 large red peppers, deseeded and sliced
- 2 tbsp tomato purée
- 400g can chopped tomatoes
- 200ml boiling chicken stock
- 300g dried basmati rice
- *Watch out for spice/seasoning blends that have added ingredients (like sugar, flour or seeds). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp.
