  • 500g lean pork mince (5% fat or less)
  • 2 spring onions, finely chopped
  • 1 green chilli, deseeded and finely chopped
  • 4 garlic cloves, crushed
  • 5cm piece fresh root ginger, peeled and grated
  • 3½ level tbsp mild curry powder*
  • 1 tbsp chilli powder
  • 3 tbsp chopped fresh coriander, plus leaves and sprigs to serve
  • 3 tbsp fat-free natural Greek yogurt
  • Low-calorie cooking spray
  • 1 large onion, finely chopped
  • 2 large red peppers, deseeded and sliced
  • 2 tbsp tomato purée
  • 400g can chopped tomatoes
  • 200ml boiling chicken stock
  • 300g dried basmati rice
  • *Watch out for spice/seasoning blends that have added ingredients (like sugar, flour or seeds). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp.
