Serves 4
- Low-calorie cooking spray
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 4 skinless and boneless chicken breast fillets, cut into bite-sized pieces
- 1 tbsp mild curry powder*
- 6 tbsp tomato purée
- 200g passata with onions and garlic
- 400ml hot low-salt chicken stock
- Small handful of fresh coriander, roughly chopped, reserving some to serve
For the spicy broccoli:
- 400g thin-stemmed broccoli
- 400g green beans
- 1 tbsp tandoori curry powder*
- *Spice blends are Free so long as they’re made from herbs and spices only and don’t include any Synned ingredients like sugar and flour. Check the label to be sure and count the Syns as necessary.
