- 2 medium aubergines
- Low-calorie cooking spray
- 2 garlic cloves, crushed
- 1 red chilli, deseeded and finely chopped
- 2 tbsp oyster sauce (vegetarians and vegans can swap for hoisin sauce – this adds 1½ Syns per serving)
- 2 level tsp sesame oil
- 2 spring onions, finely chopped
- 75g extra-firm plain tofu, drained and thinly sliced, then chopped into small squares
- 1 large tomato, halved and thinly sliced
- Fresh coriander leaves and sprigs, to serve
