Serves 4
- Low-calorie cooking spray
For the potatoes:
- 1kg large floury potatoes, such as Maris Piper or King Edward, thickly sliced lengthways
- 1 tbsp dried mixed herbs
For the chilli:
- 4 shallots, finely chopped
- 2 garlic cloves, crushed
- 2 celery sticks, diced
- 1 large carrot, diced
- 1 red pepper, deseeded and diced
- 1 tsp each of dried mixed herbs, ground cumin, ground cinnamon and chilli powder
- 400g can chopped tomatoes
- 200ml hot vegetable stock (suitable for vegans)
- 400g can black-eyed beans in water, drained
- 400g can red kidney beans in chilli sauce
- 4 tbsp finely chopped fresh coriander leaves
- Lime wedges, to serve
