Serves 4

  • 4 skinless and boneless chicken breasts, cut into bite-size pieces
  • Juice of 1 lime, plus lime wedges to serve
  • 1 tbsp medium curry powder*
  • Low-calorie cooking spray
  • 1 cinnamon stick
  • 4 cardamom pods, lightly crushed
  • 1 red chilli, left whole
  • 1 tsp cumin seeds
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 tsp finely grated fresh root ginger
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 400ml passata
  • 1 yellow pepper, deseeded and cut into small chunks
  • 100g cherry tomatoes, left whole
  • 80g baby spinach
  • Small handful of fresh coriander leaves, finely chopped
  • *Watch out for spice/seasoning blends that have added ingredients (like sugar, oil or starch). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp.
