- 1 dried rice or wheat noodle nest
- 1 large carrot, shredded
- 1 tbsp dark soy sauce
- Juice of 1 unwaxed lime
- 1 red chilli, deseeded and finely chopped
- 2-3 little gem lettuce leaves, shredded
- ½ papaya, peeled and cut into small chunks (or use 1 small pear)
- 2 tbsp chopped fresh mint
- 2 tbsp chopped fresh coriander
- 2 spring onions, sliced
