Slimming World St Clement’s cupcakes recipe

What you need:
3 medium eggs
40g granulated sugar
3 unwaxed lemons, grate the zest of 2, pare the zest of the other 1 into thick strips using a veg peeler
2 oranges, grate the zest of 1, pare the zest of the other 1 into thick strips using a veg peeler
75g self-raising flour
1 level tsp caster sugar
For the icing:
150g fat-free natural yogurt
2 level tbsp lemon curd
What you do:
1. Preheat your oven to 190°C/fan 170°C/gas 5 and line a cupcake tin with 8 cases.
2. To make the sponges, use an electric hand whisk to beat the eggs and sugar for 5-8 minutes, until the mixture doubles in volume, is thick, light and foamy, and leaves a trail when you lift the whisk.
3. Add the grated lemon and orange zest, sift over the flour, then gently fold everything
together. Divide the mixture between the cases, and bake for 12 minutes or until risen
and golden. Leave to cool.
4. While they’re cooling, make the icing. Mix together the yogurt and lemon curd until smooth. Cover and chill.
5. Cut the zest strips into thin strands and cook in a saucepan of boiling water for 5 minutes. Drain and pat dry on kitchen paper, then toss the strands in the sugar.
6. Once the sponges are completely cool, evenly spread the icing over the tops, then divide over the sugared zest to serve.
