How to make chicken quesadillas 

serves 6 
6 Syns per serving (deduct 3 Syns if using the Cheddar as half a Healthy Extra ‘a’ choice) 
ready in 20 mins 

What you need: 

low-calorie cooking spray  
½ medium red onion, finely diced 
1 medium red pepper, deseeded and diced  
2 tortilla wraps (around 65g each) 
2 skinless and boneless cooked chicken breasts, sliced or shredded  
90g Cheddar, grated  
finely chopped tomatoes, fat-free natural yogurt and mixed salad, to serve 

Tip: If you like a spicy quesadilla, add ½ tsp cumin and ½ tsp chilli powder when you’re cooking the onion and pepper. 

What you do: 

1. Spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the onion and pepper (plus the spices, if you like) and cook for a few minutes, or until softened. Remove from the pan and set aside.  

2. Add a tortilla to the pan and spoon half the veg along one half of the wrap, followed by the chicken and half the cheese. Fold it over and cook for a few minutes, then flip and cook for a couple of minutes more. 

3. Remove from the pan and repeat to make a second quesadilla. Slice each quesadilla into 3 triangles, divide between plates and serve with the tomatoes, yogurt and salad.
