Salt and pepper chips recipe

What you need:
2 medium baking potatoes, cut into chips
low-calorie cooking spray
1 small red onion, diced
1 small red pepper, deseeded and diced
2 spring onions, sliced
What you do:
1. Preheat your oven to 200°C/fan 180°C/gas 6. Spread the chips on a large, non-stick baking tray in a single layer. Spray with low-calorie cooking spray and bake for around 40 minutes until golden, turning halfway.
2. When the chips have been cooking for 30 minutes, spray a large, non-stick wok or frying pan with low-calorie cooking spray and put it over a medium-high heat. Stir-fry the onion and pepper for 5-6 minutes or until softened and a little coloured, then stir through the spring onions and set aside.
3. Once the chips are cooked, toss with the veg. Lightly season with salt and a generous twist of black pepper to serve.
