Slimming World parkin recipe 

serves 9 
5½ Syns per slice 
vegetarian 
ready in 40 mins 

What you need: 

110g low-fat spread 
60g treacle  
5 level tbsp sweetener granules 
100g self-raising flour  
40g porridge oats   
1 tbsp ground ginger 
3 eggs, beaten 
low-calorie cooking spray 

What you do: 

1. Preheat your oven to 180°C/fan 160°C/gas 4.  

2. Put a large non-stick saucepan over a low heat, add the spread, treacle and sweetener and gently melt them together. Remove from the heat.  

3. Mix the flour, oats and ginger together and stir into the treacle mixture while it’s still warm, then mix in the eggs, stirring until everything’s combined. 

4. Line a 20cm shallow square baking tin with non-stick baking paper and spray with low-calorie cooking spray. Pour in the mixture and bake for 30 minutes, until springy to the touch. Cut into 9 equal pieces and enjoy with a cuppa.
