Slimming World honey chilli chicken recipe

What you need: 

4 skinless and boneless chicken breasts  
1 tsp smoked paprika  
½ tsp onion granules  
¼ tsp cayenne pepper (optional)  
low-calorie cooking spray  
4 level tbsp honey   
2 level tbsp hot chilli sauce or sriracha  
cooked dried rice and your favourite vegetables, to serve  
lime wedges, to serve 

What you do: 

1. Put the chicken breasts between sheets of cling film and bash with a rolling pin or meat mallet until they’re about 2cm thick. Mix together the paprika, onion granules, cayenne pepper (if using) and a little seasoning. Put the chicken in a bowl and sprinkle over the spice mix, turning the chicken to coat it.  

2. Spray a non-stick griddle or frying pan with low-calorie cooking spray and put it over a high heat. When it’s hot, add the chicken and cook for 5-6 minutes on each side, or until cooked through.  

3. While that’s happening, put the honey and chilli sauce (or sriracha) in a small saucepan and warm over a low heat, stirring to combine.   

4. Spoon a quarter of the honey mixture over each cooked chicken breast. Divide them between 4 plates, along with the rice and vegetables. Serve with the lime wedges for squeezing over.
