Slimming World chocolate cake

What you need:

5 medium eggs, separated
50g caster sugar
1 tsp vanilla extract
60g self-raising flour
30g cocoa powder
½ tsp baking powder
25g milk chocolate
250g Slimming World custard

What you do:

1. Preheat your oven to 190°C/fan 170°C/gas 5.

2. Line a 20cm x 20cm tin with baking paper. Sit a large, heatproof bowl over a pan of boiling water (ensuring the bowl doesn’t touch the water), then turn off the heat. Put the egg whites and sugar in the bowl and beat until they form stiff peaks.

3. Add the egg yolks and vanilla extract to the bowl and whisk them for 2-3 minutes, until thick and glossy. Remove the bowl from the pan, sift in the flour, cocoa powder and baking powder and fold them in using a metal spoon.

4. Pour the mixture into the tin, shaking the tin a little to level it out. Bake for 10-12 minutes, or until the sponge is risen and set, then allow to cool slightly.

5. At the same time, melt the chocolate in a heatproof bowl over a pan of gently simmering water (ensuring the bowl doesn’t touch the water), stirring it occasionally. Evenly drizzle the melted chocolate over the sponge and leave it to cool slightly. While it’s cooling, follow our recipe to make the Slimming World custard. Cut the sponge into 8 equal portions and serve with the hot custard.
