Grab a platter and pile it up with…
- sliced cucumber
- celery sticks
- mixed peppers, deseeded and chopped
- whole baby carrots with mini stalks
- radishes
- grapes
- slices of wafer-thin ham and pastrami (visible fat removed)
- sliced cooked skinless chicken breast
- 35 unsalted peanuts
- 65g reduced-fat feta cheese
- boiled eggs (yolks blended with fat-free natural yogurt)
- 16 pitted green and black olives from brine
- red pepper houmous
- tzatziki
- 4 Ryvita thins
- 4 crispbreads
Red pepper houmous recipe
serves 4

What you need:
400g can chickpeas, drained
1 garlic clove, finely chopped
2 tbsp fat-free natural Greek-style yogurt
1-2 roasted red peppers in brine
What you do:
1. Put all of the ingredients into a food processor and pulse until smooth. Season to taste and store in the fridge for up to 3 days.
Tzatziki recipe

200g fat-free natural yogurt
¼ cucumber, coarsely grated
handful of chopped fresh mint
What you do:
1. Mix together all of the ingredients. Season to taste and chill until needed.
